Taco Soup

1 1/2# ground beef
1 chopped onion
12 oz. canned, diced tomatoes with juice
2 carrots, sliced thin
3 potatoes, grated
16 oz. canned corn with liquid
1 stalk celery, diced
1 pkg. taco seasoning
2-8 oz. cans tomato sauce
2 tsp. Mansmith’s Dry Fire
2 Tbsp. Mansmith’s Barbecue Paste
1-2 Cups of vegetable broth (or water)

 

Brown beef and onion, drain. Add rest of ingredients.  Add 1 to 2 cups of broth as needed. Simmer for 45-60 minutes, until vegetables are tender.  To serve, put tortilla chips in bowls and ladle on hot soup. Top with cheddar cheese.
