Crusted Filet Mignon

2 filet mignon steaks, about 4 oz. each
2 tsp. Mansmith’s Crusting Rub
1/3 C. balsamic vinegar
1/3 C. red wine
 

Sprinkle both sides of steaks with Crusting Rub. Heat a skillet or grill pan to medium high heat. Place steaks in hot pan and cook for 1 minute on each side to sear and brown.

Reduce heat to medium low and add vinegar and wine to pan. Cover and cook 3-4 minutes on each side, basting with sauce when turning. Remove to plates and drizzle with sauce.
